It will familiarise delegates with the principles of auditing techniques, facilitate the creation of an internal audit programme to improve the standard of operation and meet recognised quality standards.rnrnThis course is based on principles of ISO 19011:2018 Guidelines for Auditing Management Systems which can be applied to Internal Auditors.

Food manufacturers aim to produce products that meet in-house specifications and conform to local health regulations. These products should also meet consumer needs, be safe, wholesome and nutritious.rnrnPrerequisite programmes (PRPs) are the minimum control measures, actions and procedures that must be performed to manufacture a product that meets these needs. As no single policy or set of standards can be applied to every plant or distribution system, PRPs are used as guides in establishing individual plant policies.

HACCP is a management tool that examines business processes in a focused way to determine the best way to meet food-safety standards. It is a preventative approach to food safety that examines every stage of the production process, identifies essential procedures and ensures process standards remain constant.rnrnSimply put, it asks “What might go wrong and how do I make sure it doesn’t?”

Microorganisms have a considerable impact on the quality and safety of food products. It is important that anyone involved in food processing, handling, distribution, product development and catering (with no formal training in microbiology) understands the interactions and importance of the various forces involved.rnrnContamination by microorganisms may arise from various sources such as raw materials or the processing environment (which includes food-contact surfaces, the air, people and pests). These potential contamination sources need to be controlled to prevent spoilage and to ensure safe products.

Foundation FSSC published FSSC 22000 V6.0 on 31 March 2023. FSSC 22000 is an independently managed certification scheme, which is based on ISO 22000 and ISO/TS 22002-X series dependent on the product. The system is recognised by GFSI and other accreditation bodies.rnrnThe internationally-recognised FSSC 22000 Food Safety System enables companies to plan, implement, operate, maintain and update their food-safety management systems to ensure safe products for customers and achieve truly global recognition for their system. The course specifies the detailed requirements for establishing, implementing and maintaining the FSSC 22000 standard and the PRP(pre-requisite programmes) requirements (clause 8.2 ISO 22000:2018) for your industry. The course addresses the practical implementation of a Food Safety System.
