Refining of edible oils (at temperatures of about 200\u00b0C or higher) can produce 3-MCPD esters and GEs.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Exposure to 3-MCPDEs and GEs can occur through <strong>consumption of refined oils<\/strong> and various food products containing refined oils, such as <strong><a href=\"https:\/\/www.merieuxnutrisciences.com\/baby-food-safety-quality-sustainability\/\" data-type=\"page\" data-id=\"12677\">infant formula<\/a><\/strong>, <strong><a href=\"https:\/\/www.merieuxnutrisciences.com\/food-supplements-dietary-supplements\/\" data-type=\"page\" data-id=\"12826\">dietary supplements<\/a><\/strong>, <strong>fried potato<\/strong> products, and <strong><a href=\"https:\/\/www.merieuxnutrisciences.com\/food\/food-categories\/cereals-flours-bakery-services\/\" data-type=\"page\" data-id=\"65621\">bakery<\/a><\/strong> products. Some recent studies also suggest that they can be found in food supplements containing <strong>fish<\/strong>, <strong>algae<\/strong>, or <strong>krill oils<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">These contaminants are either formed together with the <strong>flavoring substances<\/strong>, which are of great importance for <strong>food quality and taste<\/strong>, or they are built during the <strong>refining <\/strong>process of food raw materials. In January 2018, <a href=\"https:\/\/www.efsa.europa.eu\/en\/efsajournal\/pub\/5083\" target=\"_blank\" rel=\"noopener\">EFSA&#8217;s scientific opinion<\/a> revealed that these esterified forms undergo extensive hydrolysis upon ingestion, generating high amounts of toxic MCPD. EFSA and JECFA (The Joint FAO\/WHO Expert Committee on Food Additives) assessed the health risks and established thresholds for <strong>TDI (Tolerable Daily Intakes)<\/strong>, not excluding an increased health risk for more vulnerable population groups such as infants and children.<\/p>\n<p>This issue primarily affects <strong>vegetable oils and fats<\/strong>, as well as derived foods like <strong>bakery products<\/strong>. Notably, <strong>palm oil<\/strong>, a common ingredient in many foods, including those for children, was found to contain <strong>6-10 times more MCPD and glycidyl esters (GE) than other oils<\/strong>. The proposed strategies include tools for <strong>improving agricultural practices<\/strong> and the production and processing of vegetable oils, as well as guidelines for selecting and\/or reducing the use of oils in product formulations.
