Mérieux NutriSciences is excited to offer nutrition analysis and consulting services that will make menu labeling compliance a breeze for our customers. We have a team of Registered Dietitians and Nutrition Database Specialists dedicated to working with restaurants and food service establishments to calculate the nutrition information for their menu items. 

Our services begin with a menu review to assess the needs of our customer. We then recommend methods of analysis appropriate for each recipe. Most menus will require a combination of both lab analysis and calculated analysis. Nutrient data from the analyses are compiled and used to provide the required nutrition information for each menu item in order to comply with menu labeling regulations for the US FDA or Ontario, Canada.

Menu Labeling by Laboratory Analysis

Mérieux NutriSciences offers Menu Labeling packages compliant with all FDA regulations and Ontario Canada regulations. Laboratory analysis is the gold standard in validating your nutrient profile or when nutrient content is unknown. You send in your food products and Mérieux NutriSciences analyzes in our laboratories utilizing AOAC or equivalent methods run on various chemistry instrumentation. A Certificate of Analysis is produced with complete nutrient results.

Menu Labeling by Calculated Analysis

We offer nutrition analysis by calculated (database) analysis. Calculated analysis is a computerized analysis using a Nutrition Database software. Calculated analysis may be appropriate for certain products that have not undergone extensive processing (e.g. fried, cooked, baked). There are no physical samples to send in to a lab. Instead, detailed records of your products formulation and ingredients are necessary to build the nutrient profile. Our Nutrition Database Team will help you determine if your product is appropriate for calculated analysis.

Menu Labeling for Special Diets

It is becoming more common for restaurants and food service establishments to accommodate those consumers that have special diets. These establishments are either offering a separate menu or they are placing a symbol next to those menu items that meet a special diet on their existing menu and/or on their menu boards. Our staff of Registered Dietitians and Nutrition Database Specialists will work with you to categorize your menu items into special dietary needs such as vegan, vegetarian or paleo. Even though these types of diets are not defined by the Food and Drug Administration, our experts can work with you to determine how your company wants to define them. Once this definition is defined, we can then begin reviewing the specification sheets from your suppliers at the ingredient and recipe levels. Our team will then indicate which of your menu item meets the qualifications of a special diet.

Ingredient Statement and Allergen Declaration

Restaurants and food service establishments are becoming more transparent with customers by providing allergen declarations and ingredient statements. Our Nutrition Database Team can develop your ingredient statements and allergen declarations for your menu items by reviewing your supplier’s specification sheets. ​
