Hileli uygulamalara en duyarl\u0131 g\u0131dalar ve\/veya i\u00e7erikler, de\u011feri y\u00fcksek olan ve \u00e7e\u015fitli proseslerden ge\u00e7en \u00fcr\u00fcnlerdir.<\/p>\n\n\n\n<p>Bu anlamda s\u00fct ve s\u00fct \u00fcr\u00fcnleri \u00e7e\u015fitli \u015fekillerde ta\u011f\u015fi\u015f yap\u0131labilecek \u00fcr\u00fcnlerden baz\u0131lar\u0131d\u0131r. <strong>Ekonomik ta\u011f\u015fi\u015f<\/strong> olarak da bilinen, s\u00fct\u00fcn d\u00fc\u015f\u00fck de\u011ferli bir i\u00e7erikle kar\u0131\u015ft\u0131r\u0131lmas\u0131 (suland\u0131r\u0131lmas\u0131, farkl\u0131 kalitedeki s\u00fctlerin ilavesi, peynir alt\u0131 suyunun eklenmesi gibi) s\u0131kl\u0131kla uygulanmaktad\u0131r. Ayr\u0131ca peynir alt\u0131 suyu tozunun, s\u00fct tozundan daha ucuz olmas\u0131 sebebiyle s\u00fct tozuna kar\u0131\u015ft\u0131r\u0131l\u0131yor veya yerine kullan\u0131l\u0131yor olmas\u0131 da yine ba\u015fka bir taklit\/ta\u011f\u015fi\u015f \u00f6rne\u011fi olarak kar\u015f\u0131m\u0131za \u00e7\u0131kaktad\u0131r.<\/p>\n\n\n\n<p>S\u00fct end\u00fcstrisinin bir yan \u00fcr\u00fcn\u00fc olan peynir alt\u0131 suyunun ve\/veya tozunun s\u00fcte veya s\u00fct \u00fcr\u00fcnlerine hileli ilavelerini tespit etmek i\u00e7in farkl\u0131 y\u00f6ntemler geli\u015ftirilmi\u015ftir. Kazein\/peynir alt\u0131 suyu proteini oran\u0131n\u0131n analizi i\u00e7in geli\u015ftirilen testler, belirli protein fraksiyonlar\u0131n\u0131n belirlenmesine dayanan dolayl\u0131 y\u00f6ntemleri ve protein<br>kar\u0131\u015f\u0131mlar\u0131n\u0131 bile\u015fenlerine ay\u0131ran do\u011frudan y\u00f6ntemleri i\u00e7ermektedir. Protein fraksiyonlar\u0131n\u0131n do\u011frudan belirlenmesi etkili ancak zahmetli elektroforetik, kromatografik ve imm\u00fcnoturbidimetrik y\u00f6ntemlere dayanmaktad\u0131r.<\/p>\n\n\n\n<p>Son y\u0131llarda, s\u00fct ve s\u00fct \u00fcr\u00fcnlerinin peynir alt\u0131 suyu ile hileli manip\u00fclasyonunun tespitinde, <strong>kazeinomakropeptid (CMP)<\/strong> olarak da bilinen <strong>glikomakropeptidin (GMP)<\/strong> analizine odaklan\u0131lm\u0131\u015ft\u0131r.<\/p>\n\n\n\n<p><strong>Glikomakropeptid (GMP)<\/strong>, bir glikofosfopeptit olup peynir \u00fcretimi s\u0131ras\u0131nda kimozin enziminin \u03ba-kazein \u00fczerindeki hidrolitik aktivitesi sonucunda olu\u015fmakta ve peynir alt\u0131 suyu proteinlerinin %10-20\u2019sini olu\u015fturmaktad\u0131r.<\/p>\n\n\n\n<p>Yap\u0131lan \u00e7al\u0131\u015fmalarda ya\u011fs\u0131z s\u00fct tozunun peynir alt\u0131 suyu tozu ile ta\u011f\u015fi\u015finin saptanmas\u0131nda k\u00fcl tayini, protein tayini, laktoz tayini ve <strong>glikomakropeptit (GMP)<\/strong> tayini yap\u0131larak bulunan sonu\u00e7lar kar\u015f\u0131la\u015ft\u0131r\u0131lm\u0131\u015ft\u0131r. S\u00fct tozuna %50 d\u00fczeyinde peynir alt\u0131 suyu tozu ilave edildi\u011finde k\u00fcl miktar\u0131nda dikkati \u00e7eken bir art\u0131\u015f<br>g\u00f6zlenmi\u015ftir. Demineralize peynir alt\u0131 suyunun ise k\u00fcl i\u00e7eri\u011fi s\u00fct tozundan daha d\u00fc\u015f\u00fck oldu\u011fu i\u00e7in ta\u011f\u015fi\u015fin saptanmas\u0131nda k\u00fcl y\u00fczdesi bir g\u00f6sterge olarak kullan\u0131lamamaktad\u0131r. Peynir alt\u0131 suyu tozu ve demineralize peynir alt\u0131 suyu tozunun %5 ilave d\u00fczeyinden itibaren protein i\u00e7eri\u011fi tayiniyle ta\u011f\u015fi\u015f saptanabilir. Laktoz<br>i\u00e7eri\u011fi bak\u0131m\u0131ndan da %10 ilave d\u00fczeyinden itibaren ta\u011f\u015fi\u015fi saptamada kullan\u0131labilir. <strong>Glikomakropeptid (GMP) Tayini<\/strong> ile s\u00fct tozuna ilave edilen peynir alt\u0131 suyu tozu %1 d\u00fczeyinde bile tayin edilebilmektedir.
