Foi detetada acidentalmente em alimentos pela primeira vez em 2002. Hoje sabe-se <strong>que se forma naturalmente durante a cozedura a altas temperaturas, pela rea\u00e7\u00e3o de Maillard entre a\u00e7\u00facares e amino\u00e1cidos<\/strong> \u2014 sobretudo a asparagina, presente em batatas e cereais. Alimentos ricos em amido, como batatas fritas, bolachas, p\u00e3o e caf\u00e9, podem conter n\u00edveis elevados desta subst\u00e2ncia. Os nossos laborat\u00f3rios disponibilizam a an\u00e1lise de acrilamida em alimentos por m\u00e9todo acreditado<\/p>\n\n\n\n<div style=\"height:25px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-pareceres-cientificos-e-avaliacao-do-risco\">Pareceres cient\u00edficos e avalia\u00e7\u00e3o do risco<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>A acrilamida \u00e9 genot\u00f3xica e carcinog\u00e9nica.<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">O <em>Expert Committee on Food Additives<\/em><a href=\"https:\/\/www.fao.org\/food\/food-safety-quality\/scientific-advice\/jecfa\/en\/\" target=\"_blank\" rel=\"noreferrer noopener\"> <strong>JECFA<\/strong><\/a><strong> <\/strong>(2010) e a <em>Autoridade Europeia para a Seguran\u00e7a Alimentar<\/em> <strong><a href=\"https:\/\/www.efsa.europa.eu\/en\" target=\"_blank\" rel=\"noreferrer noopener\">EFSA <\/a><\/strong>(2010, 2015) confirmaram o perigo da acrilamida para a sa\u00fade humana, uma vez que pode aumentar o risco de cancro para os consumidores de todos os grupos et\u00e1rios, sendo os mais jovens os mais expostos (CONTAM, 2015).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Os alimentos s\u00e3o a principal via de exposi\u00e7\u00e3o humana \u00e0 acrilamida<\/strong>. De acordo com a EFSA, a ingest\u00e3o di\u00e1ria representa uma <strong>exposi\u00e7\u00e3o elevada<\/strong>, j\u00e1 que muitos alimentos cont\u00eam os precursores que a originam \u2014 a\u00e7\u00facares e amino\u00e1cidos, como a asparagina. Al\u00e9m disso, a maioria dos m\u00e9todos de confe\u00e7\u00e3o dom\u00e9stica e industrial \u2014 como fritar, assar ou cozer \u2014 envolve <strong>temperaturas elevadas<\/strong>, potenciando a forma\u00e7\u00e3o desta subst\u00e2ncia.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A este respeito a ind\u00fastria europeia de alimentos e bebidas, <strong><a href=\"https:\/\/www.fooddrinkeurope.eu\/\" target=\"_blank\" rel=\"noreferrer noopener\">FoodDrinkEurope<\/a><\/strong>, e a <strong><a href=\"https:\/\/www.fda.gov\/\" target=\"_blank\" rel=\"noreferrer noopener\">FDA <\/a><\/strong>na Am\u00e9rica, publicaram diretivas espec\u00edficas para apoiar os fabricantes na redu\u00e7\u00e3o da acrilamida nos seus produtos. A Ag\u00eancia de Seguran\u00e7a Alimentar do Reino Unido (<strong><a href=\"https:\/\/www.food.gov.uk\/\" target=\"_blank\" rel=\"noreferrer noopener\">FSA<\/a><\/strong>) tamb\u00e9m lan\u00e7ou a campanha \u201c<strong>Go for gold<\/strong>\u201d com sugest\u00f5es espec\u00edficas sobre pr\u00e1ticas culin\u00e1rias para reduzir a quantidade de acrilamida.<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Enquadramento regulamentar<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Atualmente, n\u00e3o existem limites obrigat\u00f3rios para a acrilamida nos alimentos.<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Em 2011 a Comiss\u00e3o Europeia tinha estabelecido valores indicativos que, posteriormente, reduziu em 2013 (Recomenda\u00e7\u00e3o 2013\/647\/UE), uma vez que n\u00e3o se tinham observado redu\u00e7\u00f5es adequadas da acrilamida (EFSA). Em contrapartida, <strong>como a acrilamida \u00e9 genot\u00f3xica e cancer\u00edgena<\/strong>, n\u00e3o \u00e9 poss\u00edvel <strong>estabelecer uma dose di\u00e1ria toler\u00e1vel (DDT)<\/strong> nem um limiar seguro, pelo que deve ser minimizada (<strong>ALARA \u2013 As Low As Reasonably Achievable<\/strong>).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A 20 de novembro de 2017, a Uni\u00e3o Europeia emitiu o <a href=\"http:\/\/data.europa.eu\/eli\/reg\/2017\/2158\/oj\" target=\"_blank\" rel=\"noreferrer noopener\">Regulamento (UE) 2017\/2158 <\/a><a href=\"http:\/\/data.europa.eu\/eli\/reg\/2017\/2158\/oj\" target=\"_blank\" rel=\"noreferrer noopener\">da Comiss\u00e3o<\/a>, que estabelece &#8220;<strong>valores-guia<\/strong>&#8221; para a acrilamida nos alimentos mais comuns obrigando, assim, as empresas a implementar medidas adicionais de mitiga\u00e7\u00e3o.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Embora este regulamento contenha valores indicativos, mas ainda assim oficiais, o estabelecimento de limites juridicamente vinculativos ser\u00e1 o pr\u00f3ximo passo, e as ind\u00fastrias alimentares ter\u00e3o de estar preparadas para responderem \u00e0 evolu\u00e7\u00e3o da legisla\u00e7\u00e3o e \u00e0s exig\u00eancias dos consumidores.<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\"
