Este n\u00famero representa, ainda assim, uma diminui\u00e7\u00e3o de&nbsp;16,2% em rela\u00e7\u00e3o a 2022.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ainda de acordo com a an\u00e1lise dos dados do RASFF, o metal pesado com o maior n\u00famero de notifica\u00e7\u00f5es&nbsp;na Europa em 2023 foi o&nbsp;<strong>c\u00e1dmio <\/strong>com mais de <strong>180 eventos<\/strong>. De real\u00e7ar que&nbsp;o n\u00famero de eventos relacionado com o&nbsp;<strong>c\u00e1dmio<\/strong> em 2023 aumentou em 8,5% em rela\u00e7\u00e3o ao ano anterior.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\"><div class=\"wp-block-image\">\n<figure class=\"aligncenter size-full is-resized\"><img loading=\"lazy\" decoding=\"async\" width=\"800\" height=\"600\" src=\"https:\/\/www.merieuxnutrisciences.com\/wp-content\/uploads\/2024\/01\/FISH.png\" alt=\"an\u00e1lise de metais pesados em alimentos\" class=\"wp-image-76461\" style=\"width:300px;height:225px\"\/><figcaption class=\"wp-element-caption\">Em 2023, o peixe e o marisco foram a matriz alimentar mais afetada pelos metais pesados<\/figcaption><\/figure>\n<\/div><\/div>\n<\/div>\n\n\n\n<div style=\"height:25px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-concentracao-de-metais-pesados-e-sua-toxicidade\"><strong>Concentra\u00e7\u00e3o de metais pesados e sua toxicidade<\/strong><\/h2>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"heavy-metals-toxicity-at-low-concentrations\"><strong>Toxicidade de metais pesados em baixas concentra\u00e7\u00f5es<\/strong><\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Os metais pesados t\u00eam uma densidade relativamente alta e s\u00e3o&nbsp;<strong>t\u00f3xicos&nbsp;<\/strong>ou&nbsp;<strong>venenosos em baixas concentra\u00e7\u00f5es<\/strong>. N\u00e3o existe qualquer beneficio para a&nbsp;sa\u00fade identificado, sendo que est\u00e1&nbsp;demonstrado que a sua presen\u00e7a conduz ao&nbsp;<strong>aparecimento de doen\u00e7as<\/strong>, defici\u00eancias e, nos casos de elevados n\u00edveis de concentra\u00e7\u00e3o, \u00e0 morte.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">O teor de um metal pesado&nbsp;num&nbsp;alimentos \u00e9 influenciado por muitos fatores que v\u00e3o desde as condi\u00e7\u00f5es ambientais durante o crescimento at\u00e9 o manuseamento&nbsp;ap\u00f3s a colheita, processamento, prepara\u00e7\u00e3o e \u00e0s t\u00e9cnicas de confe\u00e7\u00e3o. Os metais utilizados nos equipamentos de produ\u00e7\u00e3o de alimentos ou nos materiais de embalagem&nbsp;podem contribuir<strong>&nbsp;para a contamina\u00e7\u00e3o dos produtos e, como consequ\u00eancia, para a qualidade final dos alimentos.<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Na Uni\u00e3o Europeia (UE), o&nbsp;<a href=\"http:\/\/data.europa.eu\/eli\/reg\/2023\/915\/oj\" target=\"_blank\" rel=\"noreferrer noopener\">Regulamento (UE) 2023\/915<\/a>&nbsp;da Comiss\u00e3o, de 25 de abril de 2023, estabelece <strong>teores m\u00e1ximos para certos contaminantes<\/strong> presentes nos g\u00e9neros aliment\u00edcios. O presente regulamento da Comiss\u00e3o estabelece a lista dos g\u00e9neros aliment\u00edcios que n\u00e3o podem ser colocados no mercado da UE se excederem os limites de <strong>ars\u00e9nio, c\u00e1dmio, chumbo, merc\u00fario e estanho inorg\u00e2nico<\/strong>.<\/p>\n\n\n\n<div style=\"height:25px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"13-trace-elements-necessary-for-life\"><strong>13 oligoelementos necess\u00e1rios para a vida<\/strong><\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Embora os metais pesados sejam t\u00f3xicos para os consumidores, alguns deles s\u00e3o considerados como oligoelementos e desempenham fun\u00e7\u00f5es necess\u00e1rios para a vida. Estes&nbsp;elementos s\u00e3o o<strong>&nbsp;cobre, cobalto, ferro, n\u00edquel, magn\u00e9sio, molibd\u00eanio, cr\u00f3mio, sel\u00e9nio, mangan\u00eas<\/strong>&nbsp;e&nbsp;<strong>zinco&nbsp;<\/strong>e desempenham pap\u00e9is funcionais essenciais para diversas atividades fisiol\u00f3gicas e bioqu\u00edmicas que contribuem para a sa\u00fade do corpo.<\/p>\n\n\n\n<div style=\"height:25px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"risk-assessment\"><strong>Avalia\u00e7\u00e3o do risco<\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>V\u00e1rios pareceres, avalia\u00e7\u00f5es de risco<\/strong>&nbsp;e estudos foram realizados pela<strong>&nbsp;Autoridade Europeia para a Seguran\u00e7a Alimentar (EFSA)<\/strong>&nbsp;e pela&nbsp;<strong>Ag\u00eancia Europeia das Subst\u00e2ncias Qu\u00edmicas (ECHA)<\/strong>&nbsp;para avaliar:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>A toxicidade dos metais pesados.<\/li>\n\n\n\n<li>A exposi\u00e7\u00e3o a metais pesados.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">E recomendaram as melhores pr\u00e1ticas para ajudar a reduzir a exposi\u00e7\u00e3o a alguns destes metaloides.
