Sia le industrie alimentari che il settore Ho.Re.Ca. hanno il dovere, etico e legale, di tenere sotto controllo questo aspetto per tutelare la salute dei consumatori, dato che anche una minima disattenzione pu\u00f2 trasformarsi in un serio pericolo per la salute delle persone.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Cosa sono gli allergeni alimentari?<\/strong><\/h2>\n\n\n\n<p>Gli allergeni alimentari sono <strong>sostanze proteiche<\/strong> presenti negli alimenti, solitamente innocue che per\u00f2, se ingerite da soggetti allergici, possono causare una risposta immunitaria (reazione allergica), a volte anche molto pericolosa.<\/p>\n\n\n\n<p>Nell\u2019Unione Europea, gli alimenti considerati allergeni principali, che devono essere ben segnalati in etichetta, sono 14:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>cereali contenenti glutine<\/strong> (grano, segale, orzo, avena o i loro ceppi ibridati) e prodotti derivati;<\/li>\n\n\n\n<li><strong>crostacei<\/strong> e derivati;<\/li>\n\n\n\n<li><strong>uova<\/strong> e derivati;<\/li>\n\n\n\n<li><strong>pesce<\/strong> e derivati;<\/li>\n\n\n\n<li><strong>arachidi<\/strong> e derivati;<\/li>\n\n\n\n<li><strong>soia<\/strong> e derivati;<\/li>\n\n\n\n<li><strong>latte<\/strong> e derivati;<\/li>\n\n\n\n<li><strong>frutta a guscio<\/strong> (mandorle, nocciole, noci, noci di acagi\u00f9, noci di pecan, noci del Brasile, pistacchi, noci macadamia o noci del Queensland e i loro prodotti);<\/li>\n\n\n\n<li><strong>sedano<\/strong> e derivati;<\/li>\n\n\n\n<li><strong>senape<\/strong> e derivati;<\/li>\n\n\n\n<li><strong>semi di sesamo<\/strong> e derivati;<\/li>\n\n\n\n<li><strong>anidride solforosa e solfiti<\/strong> (se superiori a 10 mg\/kg o mg\/l);<\/li>\n\n\n\n<li><strong>lupini<\/strong> e derivati;<\/li>\n\n\n\n<li><strong>molluschi<\/strong> e derivati.<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Allergie alimentari: sintomi<\/strong><\/h3>\n\n\n\n<p>Nonostante la sensibilit\u00e0 cambi <strong>da persona a persona, <\/strong>anche una minima quantit\u00e0 di allergene pu\u00f2 scatenare una reazione allergica. I sintomi possono variare <strong>da lievi a gravi<\/strong> e possono interessare diversi organi, ad esempio<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>sintomi respiratori, come starnuti e difficolt\u00e0 respiratorie;<\/li>\n\n\n\n<li>sintomi cutanei, come gonfiori ed eruzioni cutanee;<\/li>\n\n\n\n<li>sintomi gastrointestinali, come vomito e dissenteria;<\/li>\n\n\n\n<li>shock anafilattico, che pu\u00f2 portare all\u2019arresto cardiaco.<\/li>\n<\/ul>\n\n\n\n<p>Per una persona allergica, l\u2019unico modo per prevenire ripercussioni sulla salute \u00e8 EVITARE l\u2019allergene o gli allergeni a cui \u00e8 sensibile.
