{"id":200664,"date":"2025-05-20T13:59:39","date_gmt":"2025-05-20T12:59:39","guid":{"rendered":"https:\/\/www.merieuxnutrisciences.com\/?p=200664"},"modified":"2026-03-03T10:14:34","modified_gmt":"2026-03-03T10:14:34","slug":"isoflavones-soja","status":"publish","type":"post","link":"https:\/\/www.merieuxnutrisciences.com\/fr\/isoflavones-soja\/","title":{"rendered":"Les isoflavones dans les produits \u00e0 base de soja : analyse, conformit\u00e9 et r\u00e9glementation pour l&rsquo;industrie agroalimentaire"},"content":{"rendered":"\n<p style=\"font-size:18px\">Les isoflavones sont des compos\u00e9s chimiques naturellement pr\u00e9sents dans certains v\u00e9g\u00e9taux : le soja en est la principale source.&nbsp;<\/p>\n\n\n\n<p style=\"font-size:18px\">Selon l\u2019avis de l\u2019<a href=\"https:\/\/www.efsa.europa.eu\/en\/efsajournal\/pub\/4246\" target=\"_blank\" rel=\"noreferrer noopener\">EFSA<\/a>, rendu en 2015 les isoflavones sont, dans leur structure chimique, apparent\u00e9es \u00e0 l&rsquo;hormone humaine 17\u03b2-\u0153stradiol, et sont pour cette raison \u00e9galement d\u00e9sign\u00e9es sous le terme g\u00e9n\u00e9rique de \u00ab phytoestrog\u00e8nes \u00bb.<\/p>\n\n\n\n<p style=\"font-size:18px\">Les isoflavones peuvent exister :&nbsp;<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li style=\"font-size:18px\">libres (i.e. les aglycones), \u00e0 l\u2019origine des effets biologiques<\/li>\n\n\n\n<li style=\"font-size:18px\">li\u00e9es (i.e. les formes conjugu\u00e9es glycosid\u00e9es), d\u00e9pourvues d\u2019activit\u00e9 biologique<\/li>\n<\/ul>\n\n\n\n<div style=\"height:30px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-avis-et-recommandations-de-l-anses\"><strong>Avis et recommandations de l\u2019ANSES<\/strong><\/h2>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:33.33%\"><div class=\"wp-block-image is-style-rounded\">\n<figure class=\"aligncenter size-full is-resized\"><img loading=\"lazy\" decoding=\"async\" width=\"790\" height=\"530\" src=\"https:\/\/www.merieuxnutrisciences.com\/wp-content\/uploads\/2025\/08\/soy-isoflavone.png\" alt=\"\" class=\"wp-image-200684\" style=\"aspect-ratio:1;object-fit:cover;width:200px\" srcset=\"https:\/\/www.merieuxnutrisciences.com\/wp-content\/uploads\/2025\/08\/soy-isoflavone.png 790w, https:\/\/www.merieuxnutrisciences.com\/wp-content\/uploads\/2025\/08\/soy-isoflavone-300x201.png 300w, https:\/\/www.merieuxnutrisciences.com\/wp-content\/uploads\/2025\/08\/soy-isoflavone-768x515.png 768w\" sizes=\"auto, (max-width: 790px) 100vw, 790px\" \/><\/figure>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:66.66%\">\n<p style=\"font-size:18px\">Dans son avis rendu en mars 2025, l\u2019<a href=\"https:\/\/www.anses.fr\/fr\/content\/eviter-les-isoflavones-dans-les-menus-des-restaurations-collectives\" target=\"_blank\" rel=\"noreferrer noopener\">ANSES<\/a> pointe les effets nocifs sur la sant\u00e9, en particulier sur le syst\u00e8me reproducteur si elles sont consomm\u00e9es en trop grande quantit\u00e9 et recommande de <strong>ne pas servir d\u2019aliments \u00e0 base de soja en restauration collective<\/strong> et invite \u00e9galement les industriels de l\u2019agroalimentaire \u00e0 revoir les techniques de production et de transformation du soja,&nbsp;
