L\u2019atropine et la scopolamine sont les deux AT les plus pr\u00e9occupantes au regard de l\u2019alimentation humaine.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-reglementation\"><strong>R\u00e9glementation<\/strong><\/h2>\n\n\n\n<p>Pour ces deux AT (atropine et scopolamine), les teneurs maximales sont impos\u00e9es, \u00e0 ce jour, par le&nbsp;<a href=\"https:\/\/eur-lex.europa.eu\/legal-content\/EN\/TXT\/?uri=CELEX%3A02023R0915-20230810\" target=\"_blank\" rel=\"noreferrer noopener\">r\u00e8glement (UE) 2023\/915&nbsp;<\/a>dans&nbsp;:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li style=\"font-size:18px\">Les aliments pour b\u00e9b\u00e9s contenant au moins 80 % de <strong>c\u00e9r\u00e9ales<\/strong>,<\/li>\n\n\n\n<li style=\"font-size:18px\">Les c\u00e9r\u00e9ales (millet, sorgho, ma\u00efs, sarrasin),<\/li>\n\n\n\n<li style=\"font-size:18px\">Les infusions s\u00e9ch\u00e9es (fleurs, feuilles, tiges, racines, etc) et liquides.<\/li>\n<\/ul>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-toxicologie\"><strong>Toxicologie<\/strong><\/h2>\n\n\n\n<p>Selon l\u2019<a href=\"https:\/\/www.efsa.europa.eu\/en\/efsajournal\/pub\/3386\" target=\"_blank\" rel=\"noreferrer noopener\">EFSA (2013)<\/a>, les alcalo\u00efdes tropaniques r\u00e9duisent la fr\u00e9quence cardiaque chez les humains, effet qui pourrait \u00eatre n\u00e9faste chez les individus sensibles, tels que ceux souffrant de bradycardie.<\/p>\n\n\n\n<p>En effet, des intoxications alimentaires r\u00e9p\u00e9t\u00e9es, en lien avec les alcalo\u00efdes tropaniques, ont \u00e9t\u00e9 constat\u00e9es en <a href=\"https:\/\/www.salute.gov.it\/imgs\/C_17_pubblicazioni_3375_allegato.pdf\" target=\"_blank\" rel=\"noreferrer noopener\">Italie<\/a> depuis plusieurs ann\u00e9es. La consommation d&rsquo;aliments en quantit\u00e9s d\u00e9passant l\u2019ARfD (dose aigu\u00eb de r\u00e9f\u00e9rence), \u00e9tablie \u00e0 0,016 \u03bcg\/kg de poids corporel, peut \u00eatre suffisante pour provoquer des effets toxiques graves accompagn\u00e9s de manifestations aigu\u00ebs. Les effets les plus typiques des intoxications \u00e0 l&rsquo;atropine\/scopolamine comprennent notamment la mydriase, la vision floue, la tachycardie, la peau chaude et rouge, la r\u00e9tention urinaire, l&rsquo;absence de p\u00e9ristaltisme intestinal, l&rsquo;agitation\/d\u00e9lire\/hallucinations, les convulsions et la d\u00e9pression.
