Ils doivent respecter&nbsp;des crit\u00e8res microbiologiques&nbsp;d\u00e9finis dans le&nbsp;<strong>r\u00e8glement&nbsp;europ\u00e9en&nbsp;<\/strong><a href=\"https:\/\/eur-lex.europa.eu\/legal-content\/fr\/ALL\/?uri=CELEX:32005R2073\" target=\"_blank\" rel=\"noopener\">CE 2073:2005<\/a>.&nbsp;Ce r\u00e8glement pr\u00e9conise l\u2019utilisation de m\u00e9thodes de r\u00e9f\u00e9rence&nbsp;normalis\u00e9es&nbsp;ou de m\u00e9thodes alternatives valid\u00e9es&nbsp;pour \u00e9valuer ces crit\u00e8res.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">La s\u00e9rie de<strong>&nbsp;<\/strong><a href=\"https:\/\/www.iso.org\/ics\/07.100.30\/x\/\" target=\"_blank\" rel=\"noopener\">normes&nbsp;ISO 16140<\/a>&nbsp;et particuli\u00e8rement l\u2019<strong>ISO 16140-2&nbsp;: 2016<\/strong>&nbsp;d\u00e9finit le protocole de&nbsp;<strong>validation de m\u00e9thodes<\/strong>&nbsp;alternatives&nbsp;(commerciales)&nbsp;en microbiologie des aliments.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">En effet, l&rsquo;\u00e9tude de validation&nbsp;d\u00e9termine&nbsp;les crit\u00e8res de performance&nbsp;d\u2019une m\u00e9thode.
