Ceux-ci sont souvent pr\u00e9sents avec une faible pr\u00e9valence dans les aliments. Ils sont diff\u00e9rents des tests de vieillissement, qui ne donnent pas d\u2019information suffisante.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Lors des&nbsp;<strong>tests de croissance,<\/strong> les micro-organismes cibles sont inocul\u00e9s artificiellement dans un aliment. Ce dernier est ensuite soumis aux diff\u00e9rentes modalit\u00e9s de conservation.<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 id=\"h-nous-utilisons-ces-tests-pour\" class=\"wp-block-heading\"><strong>Nous utilisons ces tests pour : <\/strong><\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li style=\"font-size:18px\">D\u00e9terminer le potentiel de croissance, c\u2019est-\u00e0-dire savoir si un micro-organisme peut se d\u00e9velopper dans un aliment au cours de sa dur\u00e9e de vie et, le cas \u00e9ch\u00e9ant, conna\u00eetre l\u2019amplitude de sa croissance,<\/li>\n\n\n\n<li style=\"font-size:18px\">\u00c9valuer le taux de croissance, c\u2019est-\u00e0-dire la vitesse de multiplication, utile en particulier dans un objectif de microbiologie pr\u00e9visionnelle<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Ces&nbsp;<strong>tests&nbsp;de croissance<\/strong>&nbsp;sont&nbsp;utilis\u00e9s&nbsp;pour <em><strong>Listeria monocytogenes<\/strong><\/em> et pour les pathog\u00e8nes&nbsp;\u00e0 faible pr\u00e9valence, notamment ceux pour lesquels il existe des crit\u00e8res quantitatifs tels que <strong><em>Staphylococcus aureus, Bacillus&nbsp;cereus, Escherichia coli<\/em>&#8230; <\/strong>&nbsp;afin d\u2019\u00e9valuer leur comportement en cas de contamination accidentelle.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">M\u00e9rieux NutriSciences utilise ces tests pour estimer le comportement de flores d\u2019alt\u00e9ration comme les bact\u00e9ries lactiques ou les levures et moisissures, lors de la cr\u00e9ation de nouvelles recettes.
