La formation de l\u2019acrylamide dans les aliments est principalement li\u00e9e \u00e0 la r\u00e9action de l\u2019asparagine (un acide amin\u00e9) avec les sucres r\u00e9ducteurs (notamment le glucose et le fructose) dans le cadre de la r\u00e9action de Maillard. Ce processus est consid\u00e9r\u00e9 comme \u00e9tant \u00e0 l&rsquo;origine de la <strong>g\u00e9notoxicit\u00e9<\/strong> et de la <strong>canc\u00e9rog\u00e9nicit\u00e9<\/strong> de l&rsquo;acrylamide (en interagissant avec l&rsquo;ADN, la glycidamide induit des mutations).<\/p>\n\n\n\n<p>Selon l\u2019<a href=\"https:\/\/anses.hal.science\/anses-03922759\" target=\"_blank\" rel=\"noreferrer noopener\">ANSES (2023)<\/a>, les effets critiques de l\u2019acrylamide sont les l\u00e9sions n\u00e9oplasiques (<a href=\"https:\/\/cancer.ca\/fr\/cancer-information\/resources\/glossary\/n\/neoplasia\" target=\"_blank\" rel=\"noreferrer noopener\">d\u00e9veloppement anormal et incontr\u00f4l\u00e9 des cellules<\/a>).<\/p>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\"><\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<hr>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\"><\/div>\n<\/div>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-frequence-d-echantillonnage\"><strong>Fr\u00e9quence d&rsquo;\u00e9chantillonnage<\/strong><\/h2>\n\n\n\n<p>Selon les <a href=\"https:\/\/food.ec.europa.eu\/document\/download\/ce8f5354-24f0-49c4-b136-f651e1440ef2_en?filename=cs_contaminants_catalogue_acrylamide_guidance-doc_en.pdf\" target=\"_blank\" rel=\"noreferrer noopener\">Orientations pour la mise en \u0153uvre du r\u00e8glement (UE) 2017\/2158<\/a>, les exploitants du secteur alimentaire doivent proc\u00e9der \u00e0 un \u00e9chantillonnage au moins une fois par an pour les produits dont le niveau d&rsquo;acrylamide est connu et bien contr\u00f4l\u00e9.<\/p>\n\n\n\n<p>L\u2019\u00e9chantillonnage doit \u00e9galement \u00eatre effectu\u00e9 lors :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li style=\"font-size:18px\"><strong>D&rsquo;un changement d&rsquo;ingr\u00e9dient,<\/strong> particuli\u00e8rement si celui-ci est connu\u00a0pour influencer le niveau d&rsquo;acrylamide,<\/li>\n\n\n\n<li style=\"font-size:18px\">De la <strong>saison critique<\/strong> (s&rsquo;il existe une variation saisonni\u00e8re).<\/li>\n<\/ul>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\"><\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<hr>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\"><\/div>\n<\/div>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-aliments-hors-champ-d-application\"><strong>Aliments hors champ d\u2019application<\/strong><\/h2>\n\n\n\n<p>Ensuite, sur la base de <a href=\"https:\/\/food.ec.europa.eu\/document\/download\/ce8f5354-24f0-49c4-b136-f651e1440ef2_en?filename=cs_contaminants_catalogue_acrylamide_guidance-doc_en.pdf\" target=\"_blank\" rel=\"noreferrer noopener\">ces orientations<\/a>, les produits tels que le pain bretzel, les beignets, les muffins, les g\u00e2teaux, les \u00e9clairs, les croissants ne sont pas couverts par le champ d&rsquo;application du <a href=\"https:\/\/eur-lex.europa.eu\/legal-content\/FR\/TXT\/?uri=CELEX%3A32017R2158#:~:text=R%C3%A8glement%20(UE)%202017%2F2158,int%C3%A9r%C3%AAt%20pour%20l&#039;EEE.%20)\" target=\"_blank\" rel=\"noreferrer noopener\">R\u00e8glement (UE) 2017\/2158<\/a>.<\/p>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\"><\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<hr>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\"><\/div>\n<\/div>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-gestion-des-non-conformites\"><strong>Gestion des non-conformit\u00e9s<\/strong><\/h2>\n\n\n\n<p>\u00c9galement, selon <a href=\"https:\/\/food.ec.europa.eu\/document\/download\/ce8f5354-24f0-49c4-b136-f651e1440ef2_en?filename=cs_contaminants_catalogue_acrylamide_guidance-doc_en.pdf\" target=\"_blank\" rel=\"noreferrer noopener\">ces m\u00eames orientations<\/a>, lorsque les niveaux d&rsquo;acrylamide d\u00e9passent les teneurs de r\u00e9f\u00e9rence, cela ne signifie pas n\u00e9cessairement que l&rsquo;aliment doit \u00eatre retir\u00e9 ou rappel\u00e9 du march\u00e9.
