Ils sont \u00e0 la fois naturellement produits dans l\u2019environnement (incendies de for\u00eat et activit\u00e9 volcanique) et industriellement produits (combustion). Ceux qui concernent le plus l\u2019alimentation humaine sont&nbsp;:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li style=\"font-size:18px\">Le benzo(a)pyr\u00e8ne<\/li>\n\n\n\n<li style=\"font-size:18px\">La somme du benzo(a)pyr\u00e8ne, benz(a)anthrac\u00e8ne, benzo(b)fluoranth\u00e8ne et chrys\u00e8ne (acronyme HAP4)<\/li>\n<\/ul>\n\n\n\n<div style=\"height:18px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n\n\n<div style=\"height:18px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-reglementation\">R\u00e9glementation<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Des teneurs maximales sont impos\u00e9es pour le benzo(a)pyr\u00e8ne et les HAP4 par le&nbsp;<a href=\"https:\/\/eur-lex.europa.eu\/legal-content\/EN\/TXT\/?uri=CELEX%3A02023R0915-20230810\" target=\"_blank\" rel=\"noopener\">R\u00e8glement (UE) 2023\/915&nbsp;<\/a>dans les aliments href=\"https:\/\/www.anses.fr\/fr\/system\/files\/ALAN2015SA0075.pdf\" target=\"_blank\" rel=\"noopener\">ANSES (2017)<\/a>, le transfert des HAP de l\u2019alimentation animale vers les denr\u00e9es alimentaires d\u2019origine animale est n\u00e9gligeable dans les \u0153ufs, le lait et la chair de poissons.<\/p>\n\n\n\n<div style=\"height:18px\" aria-hidden=\"true\" id=\"h-toxicologie-des-haps\"><strong>Toxicologie des HAPs<\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Selon l\u2019IARC (Centre international de recherche sur le cancer)&nbsp;:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Le benzo(a)pyr\u00e8ne est canc\u00e9rog\u00e8ne pour l\u2019Homme (Groupe 1).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">D&rsquo;autre part, le benz(a)anthrac\u00e8ne, le benzo(b)fluoranth\u00e8ne et le chrys\u00e8ne sont\u00a0peut-\u00eatre canc\u00e9rog\u00e8nes pour l\u2019Homme (Groupe 2B).<\/p>\n\n\n\n<div style=\"height:18px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n\n\n<div style=\"height:18px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-frequence-d-analyse\"><strong>Fr\u00e9quence d\u2019analyse<\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Selon la <a href=\"https:\/\/agriculture.gouv.fr\/telecharger\/129252\" target=\"_blank\" rel=\"noopener\">DGAL (2024)<\/a>, la fr\u00e9quence d&rsquo;analyse ne peut pas \u00eatre nulle pour les \u00e9tablissements produisant des produits fum\u00e9s.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Une analyse de recherche d&rsquo;Hydrocarbures aromatiques polycycliques devra \u00eatre r\u00e9alis\u00e9e <em>a minima<\/em> au stade de la mise au point du proc\u00e9d\u00e9 pour que de la conformit\u00e9 des produits fum\u00e9s soit assur\u00e9e.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">L\u2019exploitant devra ensuite v\u00e9rifier r\u00e9guli\u00e8rement la conformit\u00e9 de ses produits finis par une analyse (notamment sur les produits les plus expos\u00e9s).<\/p>\n\n\n\n<div style=\"height:18px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n\n\n<div style=\"height:18px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-cadre-dgccrf\"><strong>Cadre DGCCRF<\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Selon la <a href=\"https:\/\/www.economie.gouv.fr\/dgccrf\/Papiers-et-cartons\" target=\"_blank\" rel=\"noopener\">fiche papiers et cartons&nbsp;<\/a>:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">La migration de HAP4 ne doit pas \u00eatre d\u00e9tectable avec une limite de d\u00e9tection de 1 \u00b5g\/kg.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>M\u00e9rieux NutriSciences&nbsp;<\/strong>effectue des analyses <strong>accr\u00e9dit\u00e9es<\/strong> des HAP dans les aliments, compl\u00e9ments alimentaires et aliments pour b\u00e9b\u00e9s en conformit\u00e9 avec le&nbsp;<strong>R\u00e8glement UE 2023\/915 <\/strong>et<strong> <\/strong>aliments pour animaux.
