Elles r\u00e9sultent de probl\u00e8mes dans les phases de <strong>production<\/strong>, de <strong>stockage<\/strong>, de <strong>transformation <\/strong>et de <strong>distribution<\/strong>. \u00c0 l&rsquo;inverse, le gaspillage alimentaire concerne les aliments propres \u00e0 la consommation, mais jet\u00e9s sciemment lors des phases de vente au d\u00e9tail ou de consommation.<\/p>\n\n\n\n<p>Les pertes et le gaspillage alimentaires ont des <strong>r\u00e9percussions sociales et environnementales<\/strong> consid\u00e9rables :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li style=\"font-size:18px\">On estime que <strong>57 millions de tonnes<\/strong> de nourriture et de boissons sont gaspill\u00e9es chaque ann\u00e9e en Europe. Cela repr\u00e9sente environ un tiers de la nourriture disponible, alors que 22 millions de personnes en Europe souffrent d&rsquo;ins\u00e9curit\u00e9 alimentaire aigu\u00eb.<\/li>\n\n\n\n<li style=\"font-size:18px\">La production alimentaire contribue de mani\u00e8re significative aux \u00e9missions de gaz \u00e0 effet de serre et consomment des ressources telles que l&rsquo;eau, les terres et l&rsquo;\u00e9nergie. Ces ressources sont donc gaspill\u00e9es lorsque les aliments n&rsquo;atteignent pas les consommateurs finaux.<\/li>\n<\/ul>\n\n\n\n<p>Bien que la majeure partie du gaspillage alimentaire se produise aux \u00e9tapes de la vente au d\u00e9tail et de la consommation, les industries peuvent agir pour r\u00e9duire leurs propres pertes. Celles-ci finissent par s&rsquo;accumuler en un gaspillage plus important.<\/li>\n\n\n\n<li style=\"font-size:18px\">Les <strong>conditions de stockage<\/strong> des mati\u00e8res premi\u00e8res et des produits finis, pouvant entra\u00eener une d\u00e9t\u00e9rioration incontr\u00f4l\u00e9e et des pertes.<\/li>\n\n\n\n<li style=\"font-size:18px\">La <strong>circulation des produits<\/strong> et des <strong>personnes <\/strong>dans l&rsquo;usine, entra\u00eenant des contaminations crois\u00e9es.<\/li>\n\n\n\n<li style=\"font-size:18px\">La <strong>courte dur\u00e9e de conservation <\/strong>des produits, qui rend difficile leur mise sur le march\u00e9 dans les plus brefs d\u00e9lais.<\/li>\n\n\n\n<li style=\"font-size:18px\">Des <strong>pratiques inad\u00e9quates<\/strong> de la part des employ\u00e9s travaillant sur la cha\u00eene : le taux de rotation \u00e9lev\u00e9 dans le secteur et les difficult\u00e9s d&#8217;embauche rendent difficile la formation des travailleurs aux bonnes pratiques de fabrication et \u00e0 l&rsquo;HACCP.<\/li>\n<\/ul>\n\n\n\n<p class=\"has-text-align-left\"><strong>L&rsquo;optimisation des pertes alimentaires dans l&rsquo;usine va de pair
